BERNAL: “It's not enough to know that animal industrial farming is unsustainable in the aim to feed people, we also need to connect the best science available with the interest of these consumers and also with the food industry, who will develop these products, and with the government to ensure a fair playing field for products in the market through regulation as well as funding from our research to improve the taste, nutritional quality, and accessibility of this project. So, we not only amplify the voices of regional realities, ensuring that they are recognized, but we also make sure that their -- their issues are addressed and their interests are being considered.”
